Instant Pot Sausage, Chicken, Potato Soup


This was a fast use the vegetables that are going to go bad and clean the freezer kind of soup.

Ingredients:

  • 1 T. olive oil
  • 1 chicken breast, cut into pieces
  • 1 Portuguese sausage or chorizo cut up
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 1 box or 4 cups chicken broth
  • 2 Idaho potatoes, peeled and diced 
  • 2 bay leaves
  • 1 can diced tomatoes
  • other leftover vegetables like mushrooms, zucchini, carrots
  • 5 oz. kale or mixed supergreens (kale, collard, swiss chard)
  • 1 15oz. can garbanzo beans or cannellini beans, drained, rinsed
  • salt, pepper to taste
Directions:

  1. Turn Instant Pot to saute. When the pot is hot, add oil and sear the chicken, sausage and onions, about 3 minutes.
  2. Add garlic and saute another minute.
  3. Add broth, potatoes, bay leaves, tomatoes, kale and other veggies (not beans).
  4. Turn IP to soup and set timer for 8 minutes.
  5. When the timer is done, quick release, turn to saute and add the beans until the soup boils again.
  6. Add salt and pepper to taste and serve.
