Hawaiian Style Hamburger Curry
What makes this Hawaiian? It tastes great with a little dollop of mayonnaise (Best Foods). It is like a Mulligan stew but it uses hamburger, a frozen bag of mixed veggies and off the shelf curry powder. Nothing fancy. Serve with rice. One bowl and one pot with a spoon will do you.
Ingredients:
- 1 lb. hamburger
- 1/2 block butter
- half an onion, diced
- 3 stalks celery, diced
- 1 lb. frozen mixed vegetables*
- 1 potato, peeled, diced
- 1 T salt
- 2-3 T curry powder
- 1/4 c. shoyu
- 5 oz. evaporated milk
Directions:
- Melt butter in a pot on medium and cook onion and celery until it starts sweating. It should not be brown. I like to salt at every stage.
- Add hamburger and potato. Brown. Drain fat if necessary.
- Once hamburger is browned, add curry, salt if necessary and stir well. Cook covered about 5 minutes to soften the potatoes and infuse the flavor.
- Add shoyu and evaporated milk, stir and simmer another 10 minutes, covered. If you want a little more sauce, add a little more evaporated milk. Taste, salt if needed.
- We eat it as is, but if you want to thicken it more, use a flour and water paste to thicken.
