Hawaiian Style Hamburger Curry


What makes this Hawaiian? It tastes great with a little dollop of mayonnaise (Best Foods). It is like a Mulligan stew but it uses hamburger, a frozen bag of mixed veggies and off the shelf curry powder. Nothing fancy. Serve with rice. One bowl and one pot with a spoon will do you. 

Ingredients:

  • 1 lb. hamburger
  • 1/2 block butter
  • half an onion, diced
  • 3 stalks celery, diced
  • 1 lb. frozen mixed vegetables*
  • 1 potato, peeled, diced
  • 1 T salt
  • 2-3 T curry powder
  • 1/4 c. shoyu
  • 5 oz. evaporated milk

Directions:

  1. Melt butter in a pot on medium and cook onion and celery until it starts sweating. It should not be brown. I like to salt at every stage.
  2. Add hamburger and potato. Brown. Drain fat if necessary.
  3. Once hamburger is browned, add curry, salt if necessary and stir well. Cook covered about 5 minutes to soften the potatoes and infuse the flavor.
  4. Add shoyu and evaporated milk, stir and simmer another 10 minutes, covered. If you want a little more sauce, add a little more evaporated milk. Taste, salt if needed. 
  5. We eat it as is, but if you want to thicken it more, use a flour and water paste to thicken.
