Chicken Pesto Tomato Cheese



There is probably a better name for this but it is what it is.

Ingredients:

3 - 4 chicken breasts (if you pound it, it will cook faster)
tomato
mozarella
pesto
salt
2 cloves garlic, minced

Directions:

  1. Preheat oven to 400° F
  2. Put chicken in a oven-safe casserole dish. Salt chicken breasts, divide garlic on each piece, then pesto, slice of tomato and cheese
  3. Bake in oven for 40-60 minutes (depending on thickness of chicken - just check for doneness)
  4. With about 10 minutes left, I put another thin tomato slice and some parmesan cheese on top.
