Canned Corn Jalapeno Salsa


Part pantry recipe, part leftover veggies recipe this will probably taste great with fresh corn, but fresh corn is hard to come by in Hawai'i. 

We use this on make your own taco bars, but I also like this with chips or better yet, as a dressing for mixed green salads. 

Canned Corn Jalapeno Salsa

Ingredients:

  • Canned corn, drained 
  • 1/4 c red onion, diced
  • 1/4 c Roma tomato, diced
  • 1 jalapeno, seeded and diced
  • 1/2 lime, juiced
  • 1 T cilantro, chopped
  • salt and pepper to taste
Mix all ingredients and let it marinate in the refrigerator for at least half an hour.  Season again for the right amount of salt and sour, mild heat.
