Easy French Toast with Brown Sugar Apple Bananas
The photo is gross, I know. But this is a place to keep our family recipes so our kids can find them when we're gone, so trust. . .it is ʻono, especially when you have apple bananas that are a little past just eating them but not so mushy that it has to be frozen for smoothies.
We also enjoy a walnut cranberry bread that our friend sells at the Kinoole Farmer's Market on Saturdays so these are just 4 thick slices of walnut cranberry bread and 3 apple bananas starting to brown and spot.
Ingredients:
For easy French toast
- 4 thick slices bread
- 2 eggs
- 1 1/2 - 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 c milk
For brown sugar bananas
- 3 soft apple bananas, sliced
- 2 T honey
- 2 T brown sugar
- 2 T salted butter
Directions:
- Whisk French toast ingredients and soak break on both sides
- Because I am using fresh bread, I like to dry it out a little so the bread does not shred apart when I am frying it.
- Get a griddle or large frying pan going with a little butter. Cook the French toast on medium high until it is brown on both sides. About 5-7 minutes a side, just check it. You want it a little custardy in the **Because I do everything simultaneously, it is easier to put oven on to 200 degrees and just put the cooked slices in the oven on a plate.
- Start a small frying pan with the 2T salted butter and melt it until it starts foaming/bubbling. Add the banana slices and fry on two sides. Once they are a little browned on the edges, add the honey sugar mix and gently mix the bananas and butter with the honey sugar mix.
Serve bananas warm with the warm French toast. Yum!
