Instant Pot Chicken Lūʻau

 


Ingredients:

  • 1 T. butter
  • 1 1/2 lb chicken thighs (preferred) or breasts, cut into bite size pieces
  • 1/2 t. Hawaiian salt (to start)
  • 1/2 diced round onion
  • 2 c chicken broth
  • 1 lb. fresh lūʻau
  • 1 can coconut milk

Instructions:

  1. To prepare the taro leaves: Wash the taro leaves with water. Break the stems off the leaf, peel the skin off the stems, and break the stems into pieces (two-finger width). Cut the leaves. Be aware, lūʻau can make skin itchy, so wear gloves if you want!
  2. Put the butter into the Instant Pot and sear the cut chicken on “sauté.” Put the salt, onion, chicken broth, and lūʻau in the Instant Pot and cover.  You will need to push the leaves down to close the pot.
  3. Cook on “Pressure Cook” on high for 35 minutes. Release the steam (can wait for natural release if you prefer) and mix with coconut milk. Four servings.
