Instant Pot Corn Chowder
Ingredients:
- 3 slices bacon, chopped
- 1 diced onion
- 3 cloves garlic, chopped
- 3 - 4 red or yellow potatoes, halved and quartered
- 4 cups chicken broth
- 1 lb. frozen corn
- 1-2 tsp. Italian seasoning
- pinch of cayenne (optional)
- 1 can creamed corn
- 1 c heavy cream, half and half (whatever your dairy tolerance)
Directions:
- Turn IP on to sauté and fry bacon. Take the bacon out and dry on a paper towel
- In bacon oil, sauté onions and garlic until onions are softened
- Use a wooden spoon and some of the chicken broth to scrape the bottom of the IP for brown bits. Add bacon, potatoes, rest of chicken broth, frozen corn, Italian seasoning and cayenne. (Grandma Hughesʻ ʻele ʻele seasoning can be subbed for cayenne)
- Set IP on manual, 10 minutes, then quick release.
- Put IP on sauté, add canned cream corn and cream.
- Mix well, taste and season.

shredded cheddar
green onions
crispy, crumbled bacon
