Cucumber Tomato Summer Salad

If you are looking for a namasu type of summer salad, this is a great subtle salad that is refreshing and crunchy and just enough puckery. We serve this with grilled steak and corn. This is not the star of the show, but it is not meant to be. 

Ingredients:

  • 3-4 ripe tomatoes, sliced into wedges (8-10 per tomato) - ~3 cups
  • 2 firm Japanese cucumbers, sliced thin ~ 4 cups
  • 1/4 red onion, diced ~ 1/2 cup
  • 1/2 c rice vinegar (not seasoned sushi rice vinegar)
  • 4 tsp sugar
  • 1/2 tsp salt
  • 1 T fresh chopped dill

Directions:

Mix tomatoes, cucumbers and onions in a large bowl. In a smaller bowl, mix the su (vinegar dressing: vinegar, sugar, salt). When the sugar is dissolved, mix into the vegetables, add dill and refrigerate for at least an hour to marinate.
