Ice Cake

 This is a nostalgic memory of Waiakea Uka store ice cake and Bruddah Pops bought unfrozen from the porn shop. It's a Hilo thing. If you know, you know. Since this blog is for my boys who grew up in Waiākea, Hilo, Hawaiʻi so that when they ask for recipes, I know where they are, then they will understand.

There are two options for the "simple syrup" or "sugar water" option. Play with it to your taste. The thing about malolo syrup or "juice" at luau is that everyone has a preference of water to syrup ratio for the juice so same thing. If you prefer a more sweet version to go with the li hing mui, use the simple syrup. It is a taste preference.



Like making shoyu sugar, the ratios stay the same. This ratio will give you enough to fill 8- 3.25 oz cups (the picture above is from the ice cream individual cups that we emptied out to use the container, however, we now buy disposable plastic 3.25 oz containers with lids from our local paper/party products store - Hopaco).


Ingredients/Directions:

  • 2 cups sugar water, cooled
    • Either make simple syrup = 2 cups of sugar and 2 cups of water heated until the sugar dissolves OR
    • 2 T of sugar dissolved in a very hot 2 cups of water OR
    • any ratio in between 
  • 1/4 cup Malolo syrup or other juice concentrate, any flavor 
  • 1/4 cup evaporated milk
  • li hing mui (seed or seedless) - optional
Mix the liquids together, pour into plastic cups/containers, cover if using plastic covers or foil and freeze for at least 3 hours. If you want the li hing mui seed, place one in each cup before covering.
