Keeper Project peanut sweet chili sauce



There was a Filipino woman at the Hilo Farmer's market that would sell the best peanut sweet chili sauce that we would use with fresh cucumbers, satay, dip for summer rolls, and anything that could be dipped. Over the years, it has been hard to find her or she runs out of sauce so this is Big Spazz's version. So good and chunky. Make romaine lettuce cups and fill with cucumber spears, roasted chicken and peanut sauce, a sprig of cilantro if you must. I also added ban mi veggies squeezed dry for a little sour.

Ingredients:
  • I jar peanuts, unsalted
  • 2 1/2 c. sweet chili sauce
  • hand full of cilantro
  • 1 T. garlic
  • 1 tsp. fish sauce
Directions:
Put all ingredients in a food processor and pulse. It will be a little chunky.
