Instant Pot Okinawan Miso Shoyu Chicken


Not the best picture, but Boy 1 and Girl 1 liked the chicken better than the pork

Ingredients:
  • 5 lb chicken thighs, bone in, skin on (frozen ok)
  • 1 c. shoyu
  • 1 c. brown sugar, packed
  • 1/2 c. water
  • 1 onion, chopped
  • 2-3 tsp. minced garlic
  • 1 thumb ginger, sliced
  • 3-4 tsp. cooking Mirin
  • 2-3 tsp. sake
  • 3-4 T. miso
Directions:

  1. Mix the  ingredients (minus the chicken) in a separate bowl. Make sure the miso is whisked well
  2. Put pot on saute, pour in sauce and heat it up.
  3. Add chicken, mix chicken around so everything is coated.
  4. Put pot on manual setting for 12 minutes, 10 minute NPR (natural pressure release)
  5. Place chicken on foil lined pan and broil until the skin is carmelized.
  6. The sauce can be thickened in the pot with a little cornstarch.

  2. Can you make this in a crock pot? My IP isn’t that big and I don’t think 5lbs will fit.
