Instant Pot Salmon with Garlic Potatoes and Super Greens
Summer in Hawaiʻi has been a clear, sunny, somewhat muggy 89° and nothing gets cool until about 1 or 2 am so turning on the stove or oven is not an option, so I am trying new recipes in the Instant Pot, even if it does not really save time.
This one was simple and besides the rack that comes standard in the Instant Pot, I could cook the main dish and the side without any other equipment. That's a winner right there.
IP Salmon w Garlic Potatoes and Greens
Ingredients
- 1 1/2 lbs. small red potatoes, cut in half or quarters. The pieces should be even to each other.
- 4 T butter, divided
- Preferred salt and pepper (garlic salt, Rockin H Ranch flavored salt, lemon pepper, etc.)
- 1 1/2 lbs skin on salmon cut into 4 pieces. Should be 3/4 to 1" thick
- Favorite salmon flavorings (paprika, lemon zest, salt and pepper. . .)
- 4 cloves minced garlic
- 4 cups packed greens mix like spinach, arugula, kale, chard - sometimes they are called super greens
Directions
- Put potatoes, 2 T butter cut up and sprinkled, 1 cup water, 1 tsp salt and a few shakes of pepper in Instant Pot. Put the steel trivet that comes with the Instant Pot over the potatoes.
- Season the salmons and place on the trivet skin side down.
- Put lid on, ensuring the steam valve is on off and put it on manual for 3 minutes, QR.
- Remove the salmon and the trivet. Turn IP to saute. When the potatoes start to sizzle, add the garlic and mix. The potatoes will start to break apart. That is good. You want a rough mash.
- Add the rest of the butter, taste and salt. Continue to saute for a couple minutes and break the potato pieces a little until chunky.
- Turn the heat off, mix in the greens and wilt it a little. Serve immediately.
