Pumpkin Angel Food Cake


Why this is part of the Keeper Project:

  • less than 5 ingredient easy
  • low calorie (4 WW points)
  • a good way to use canned pumpkin puree

Ingredients:

  • 1 box angel food mix
  • 1 c water
  • 1 (15 oz) can pumpkin puree
  • 2 tsp pumpkin pie spice

Directions:

  1. Preheat oven to 350°F and lightly grease a glass 13x9" baking dish. 
  2. Mix water and angel food cake mix with a whisk. Make sure the bowl is big enough as it foams up.
  3. Fold in pumpkin puree and pie spice.
  4. Bake for 20-25 minutes until a toothpick comes out clean.
Note: This is freezable. Cut it separately, store in plastic wrap and a Ziploc and freeze.
