Banana Egg Mochiko Pancakes


I was looking for a way to use our apple bananas and I found an almost vegan recipe and adjusted it. This makes just enough for the two of us, but the ration can easily be doubled and tripled. 

Ingredients:

  • 4 overripe apple bananas
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 2 large eggs
  • ~ 4 T mochiko flour

Directions:

  1. Preheat oven to 350°F 
  2. Mash bananas in a large bowl then add baking powder and vanilla extract to mix well.
  3. In a separate bowl, whisk the eggs and incorporate into banana mixture.
  4. After adding each T of mochiko, mix well. Batter should be thick and scoopable but not dry. I added about 4 T. If it gets too dry, add some milk or non-dairy milk. 
  5. Heat a large cast iron pan with a little oil until the pan is hot, then reduce heat to medium low. Cook these pancakes low and slow. When the first pancakes are done, put them in the oven until the rest of the pancakes are done. This helps to cook the inside and gives it a cakey texture. 
To make this vegan, make 2 flax eggs or 2 chia eggs.
