Instant Pot London Broil roast for 2
If I am feeding the family, like Sunday dinner, I use two Instant Pots, but this was an easy weekday dinner for 2 (with enough leftovers for lunch). This uses a small London Broil (50% off at Safeway) that is just shy of 2 lbs. so I reduced the time by about 10 minutes. It will still take you about a little over an hour from prep to table, so plan accordingly.
Ingredients:
- London broil (thawed), 2 lbs.
- 1 T olive oil
- 4 c beef broth
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp sea salt
- 1/2 tsp pepper
- 1/2 tsp paprika (or smoked paprika)
- 1 onion, chopped large
- 1 lb baby potatoes, washed but left whole
- 1 lb baby carrots or carrots cut large
- 1 packet Ranch dressing mix
- 2 T butter
Directions:
- In a separate bowl, mix onion powder, garlic powder, salt, pepper and paprika. Put IP on saute and use the seasoning mix to season meat.
- Oil the pot and sear the seasoned meat on all sides. Like a grill, just let it sear on each side for about 3 minutes each. Don't worry if the bottom starts burning because the broth will take the brown bits off.
- Add the beef broth and scrape the bits off with a wooden spoon.
- Add the vegetables around the meat
- Sprinkle the Ranch dressing mix on top and cut the butter into cubes to sprinkle. Give everything a mix so the dressing is dissolved in broth.
- Put IP on manual for 40 minutes with a 10 minute natural pressure release.
- After the 10 minutes natural pressure release, release valve, take out vegetables with a slotted spoon, cut meat and plate everything.
- Meanwhile, put the IP on saute, mix 2 T cornstarch with about 1/4 c water to make a slurry and thicken the broth into gravy
