Instant Pot Cheesy Grits

Not the best picture, but this recipe is so good with ribs and it is done in half an hour without standing over the stove.

Ingredients:

2 T butter
1 cup Bob's Mill grits (not instant)
3 c water or more depending on consistency
1 1/2 c milk
3/4 c grated cheddar
Salt and pepper to taste
Rockin H Ranch chorizo seasoning to taste (sub Old Bay or smoked paprika)
Parmesan for funk

Directions:

  1. Put IP on saute, melt the butter, then add grits
  2. Moisten and lightly toast the grits with the butter for a couple of minutes.
  3. Add the water and some salt. Cover and seal the IP and set it to Manual for 10 minutes (15 minute NPR)
  4. Release any remaining pressure, add the milk and cheddar and stir in. Put it on manual for 2 minutes and QR.
  5. Release the pressure, turn off the keep warm setting and season with salt and chorizo seasoning. If using Old Bay, watch the salt. Add parmesan right before serving for a little funk. You can also serve with green onions. Eat right away but it is good heated up the next day too.
