Kabocha Rice in Instant Pot


Costco sells cut and cleaned kabocha squash that comes in two vacuum-packed bags. This recipe is for one bag. I had to tweak this because all of the internet recipes call for a 1:1 ration of rice to water and it just did not work. This one had a nice texture. The squash looked like it was going to stay intact, but a simple mixing with the shamoji (rice paddle) broke up the squash in the rice like butter.

Since I was already at Costco I picked up a roast chicken and broke it down while the rice and squash were cooking. 

Ingredients:

1 cup (I used an American measuring cup, not the cup that comes with the rice cooker) jasmine rice
1 1/2 cups water
1 T sake
1 tsp. salt
4-5 drops of sesame oil
1 package (about 2 cups) chunked kabocha (I did not peel it)

Directions:

Put all of the ingredients in the Instant Pot and give it a good stir. Set on manual for 7 minutes. When it beeps, turn off the warming and let it natural pressure release for about 10 minutes. Mix it again and ready to serve.
