Lazy Sunday: Violet Beauregarde Pancakes

Our go-to vegan Violet Beauregarde pancakes are perfect for lazy Sunday mornings because all of the ingredients are in our pantry or in the freezer. A lot of things are optional depending on what you have around or what you want to get rid of.

2 cups whole wheat flour
3 T. "sugar" (Splenda, date paste, stevia, etc.)
3 T. baking powder
2 c. soymilk (or more for consistency)
1/3 c. frozen blueberries

Other add-in options:
3 T. Tofutti vegan cream cheese
2 fresh bananas, mashed

Stir the ingredients and adjust soymilk for the appropriate pancake batter consistency. Fry the pancakes without oil on a non-stick griddle and prepare the frozen blackberry syrup.

Blackberry syrup
Put handfuls of frozen blackberries in a medium pot with a little water and heat it up for a sugar free syrup. Breakfast is ready to serve in less than half an hour.
