Baked Penne with HH Cheese Sauce
This is the other book I got from Amazon ($4.50 on Kindle, except that we're a Nook family).
Our newest keeper recipe: baked pasta with Happy Herbivore's gooey no cheese cheese sauce.
Preheat oven to 350 degrees
Ingredients:
1 box of your favorite good for you pasta (brown rice, whole wheat, whatever) - boiled and drained
bell pepper, diced
onion, diced
garlic
1 package soy crumbles
1 can/jar of homemade or veggie marinara sauce
Saute the onion, garlic and pepper until the onion and pepper are soft. Add the soy crumbles until cooked and add the marinara.
Put the pasta in a pan and mix in the sauce. Bake for 20 minutes.
Reduce heat and continue whisking until it thickens.
Put cheese sauce over baked pasta and bake for an additional 10 minutes.

While the pasta cooks, make the sauce
2 c. non-dairy milk
1/2 c. nutritional yeast
4 T. cornstarch
4 T. whole-wheat flour
6 t. lemon juice
4 t. mellow miso
2 t. onion powder
1 t. garlic powder
1/2 t. dry mustard powder
Whisk in a pan and heat on high until it bubbles.
Put cheese sauce over baked pasta and bake for an additional 10 minutes.
