Curry Pea Salad with Almonds

We had a wonderful pea salad made by our friend Miss Kimi. Not only was it good that night, but the next day, it was wonderful over our salads as a "gravy." I knew what the make up of the ingredients were and the rest was just taste and adjust.

1 lb. of peas, thawed and drained
1/4 cup green onions, sliced
a couple handfuls of raw almonds, course chopped (this is my favorite nut chopper from Martha Stewart- it has measurements on the bottom container and it's easy to clean)
one can of water chestnuts, diced
Mix the ingredients in a large bowl

2/3 cup vegenaise
3 tsp. curry powder
    mix the veganaise and curry powder in a separate bowl then mix it into the salad

The almonds give it a nice crunch and the curry makes it yum.
